Chicken Fried Rice (Brown, White, or Cauliflower)
Before you make any assumptions: you can 100% substitute white or brown rice for the cauli-rice in this recipe and I've even included the nutritional information for both versions. So pipe down, pick your favorite options, and thank me later because, hot damn, this is a delicious meal.

I was craving chicken fried rice but this dish poses a few challenges because my diet does not include:
rice
soy sauce (or any other sauce that is common in chinese cuisine due to the additives)
Fortunately, I love to cook so I accepted the challenge to come up with something that is not lacking in flavor and really doesn't taste like anything is missing or different.
I like rice but I love cauliflower. Maybe that makes me weird (trust me, this is not the thing that makes me weird, there are plenty of other things). I love veggies especially the"farty" vegetables...my husband's words, not mine (cabbage, cauliflower, brussel sprouts). He hates when I cook these things because they make the house smell. Whatever dude... he cooks maple bacon, which smells great while it's cooking but that maple smell lingers for days and permeates every bit of fabric in the house. It literally starts to piss me off after about day 2. I HATE that smell...but I digress.
