Rainbow Confetti Pasta Salad

Sunday, March 20 is the first official day of Spring 2022 so I have the perfect spring picnic or Easter brunch recipe. I named this one because there are a lot of colorful chopped veggies, which remind me of rainbow sprinkles or rainbow confetti. Plus it just tastes so good it will make you think of happy things like rainbows, unicorns, and glitter.

This recipe uses pasta made with chickpea flour but you can use any type of pasta. Keep in mind, the nutritional info will be different than what I have listed below. You can also use any pasta shape that you like but I recommend a firm one such as rotini, mini penne, or mini bowtie. These will hold the dressing well while also adding some visual appeal.
