Ham, egg, & Hashbrown Stacks
Updated: Jan 23, 2022
Are you a morning person? Because, I am NOT! I wake up hungry and with my stomach growling almost every day. I am a daily eater of breakfast but yogurt or a smoothie don't cut it for me (those are snacks, not breakfast). I need something substantial that will satisfy my hunger and hold me for a few hours or until lunch time.
This used to be one of my "go to" breakfasts a few years ago. In my quest to constantly try different foods, I completely forgot these existed until yesterday <insert the sound of angels singing>. This is a hearty breakfast that tastes like a "cheat" meal.
The recipe is excellent as is, but there's also room to experiment. You could sub turkey sausage or regular bacon for the Canadian bacon.
Want a vegetarian option? Try scrambling your eggs with tomatoes, artichoke hearts, spinach, feta, and
maybe a little oregano for a Greek stack.
Vegan option? Try a taco seasoned tofu scramble with jalapenos, black beans and a little salsa.
This yields two servings but you can treat yourself without wrecking your diet. The entire recipe is just over 400 calories and 22g of protein.

Get creative with this one but don't forget to adjust your nutritionals accordingly.
